Description

These Monster Muffins are a fun and nutritious treat packed with spinach and avocado, making them both delicious and healthy. Perfect for kids and adults alike, these muffins have a moist texture, a subtle sweetness from brown sugar, and are dotted with chocolate chips and adorable candy eyes for a spooky twist.

Ingredients

Scale

Wet Ingredients

  • 3 cups spinach
  • 1 cup milk
  • 2 eggs
  • 1 avocado
  • 2 tablespoons butter (melted)

Dry Ingredients

  • 2 cups flour
  • ½ cup brown sugar
  • 3 teaspoons baking soda
  • 1 teaspoon salt

Add-ins and Decoration

  • ½ cup chocolate chips
  • Candy eyes (edible googly eyes)

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 375°F (190°C). Line two 12-cup muffin pans with cupcake liners and set aside.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, brown sugar, baking soda, and salt until evenly combined.
  3. Blend Wet Ingredients: In a food processor, blend the spinach, milk, eggs, avocado, and melted butter until the mixture is smooth and well combined, which should take about 5 minutes.
  4. Combine Mixtures: Pour the blended spinach mixture into the bowl with dry ingredients and gently mix until just combined, ensuring you do not overmix.
  5. Add Chocolate Chips: Fold the chocolate chips into the batter evenly.
  6. Fill Muffin Liners: Spoon about ¼ cup of batter into each cupcake liner, filling them evenly.
  7. Decorate: Sprinkle additional chocolate chips on top of each muffin and place edible candy eyes to create a monster face effect.
  8. Bake: Bake the muffins for 15 to 18 minutes, or until the tops are firm and a toothpick inserted comes out clean. Let them cool before serving.

Notes

  • Allow muffins to cool completely before removing from the liners to avoid breaking.
  • For a dairy-free version, substitute milk and butter with plant-based alternatives.
  • Make sure not to over-blend the batter once combined to keep muffins tender.
  • These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • Adding candy eyes is optional but perfect for Halloween or themed parties.
