Description

This Moose Tracks Protein Ice Cream is a deliciously creamy, high-protein frozen treat perfect for a healthy dessert or snack. Made with skim and almond milk, vanilla protein powder, sugar-free vanilla pudding mix, and sweetened with monk fruit, it offers a guilt-free indulgence. The ice cream is mixed with dark chocolate chips and mini Reese’s peanut butter cups for a delightful texture and taste, making it a perfect protein-packed twist on classic Moose Tracks ice cream.

Ingredients

Scale

Base Ingredients

  • 1 cup Fairlife skim milk
  • ¾ cup unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 1 tablespoon sugar-free vanilla pudding mix
  • 1 tablespoon monk fruit sweetener
  • ½ teaspoon salt

Mix-ins

  • 2 tablespoons dark chocolate chips
  • 3 tablespoons mini Reese’s peanut butter cups

Instructions

  1. Prepare the Mixture: In a mixing bowl, whisk together Fairlife skim milk, unsweetened almond milk, vanilla protein powder, sugar-free vanilla pudding mix, monk fruit sweetener, and salt until the mixture is smooth and well combined.
  2. Freeze: Pour the mixture into a freezer-safe container, cover it tightly with a lid or plastic wrap, and freeze for at least 24 hours until fully frozen.
  3. Process the Ice Cream: Remove the frozen mixture from the freezer and let it soften at room temperature for 5 to 10 minutes. Then, blend the softened mixture in a blender or food processor until creamy and smooth.
  4. Add Mix-Ins: Melt the dark chocolate chips in the microwave in 30-second intervals, stirring in between until fully melted. Drizzle the melted chocolate into the blended ice cream.
  5. Incorporate Reese’s: Add the mini Reese’s peanut butter cups to the ice cream and pulse the blender a few times to evenly distribute the mix-ins throughout the ice cream.
  6. Serve or Freeze: Serve the ice cream immediately for a soft-serve texture, or return it to the freezer if you prefer a firmer consistency.

Notes

  • For best results, use a high-quality vanilla protein powder to enhance the flavor.
  • Letting the ice cream soften slightly before blending is key to achieving a creamy texture without ice crystals.
  • The monk fruit sweetener keeps the recipe low in sugar without sacrificing sweetness.
  • You can substitute mini Reese’s peanut butter cups with any other favorite nut butter cups or chocolate candies.
  • If you want a dairy-free version, swap skim milk with a plant-based milk alternative, but note it might change the texture slightly.
