Instructions
- Prepare Parchment Paper: Pull out 2 sheets of parchment or wax paper and set aside to place the cookies on after mixing.
- Combine Ingredients: In a medium-sized saucepan over low heat, combine butter, milk, sugar, and cocoa powder. Stir continuously with a wooden spoon until the butter is completely melted and mixture is smooth.
- Boil Mixture: Increase heat to medium. Stir constantly and bring the mixture to a boil. Allow it to boil for 1 minute exactly, stirring constantly to prevent burning. Then remove from heat and keep stirring for a few seconds.
- Add Peanut Butter and Vanilla: Add the peanut butter and vanilla extract to the hot mixture, stirring continuously until the peanut butter is fully melted and everything is well incorporated.
- Incorporate Oats: Add the quick oats to the mixture and stir thoroughly until all oats are fully coated with the chocolate-peanut butter mixture.
- Shape Cookies: Using a spoon, drop approximately 2 tablespoons of the mixture onto the prepared parchment or wax paper sheets, spacing them apart to allow for setting.
- Cool and Set: Allow the cookies to cool and set at room temperature for 20 to 30 minutes until firm.
- Storage: Once set, store the no bake cookies in an airtight container at room temperature to keep them fresh.
