Description

Delicious and easy-to-make no bake cookies featuring a rich combination of cocoa, peanut butter, and oats. These cookies require no oven and come together quickly on the stovetop, making them perfect for a quick treat or dessert.

Ingredients

Scale

Wet Ingredients

  • 1/2 cup salted butter
  • 1/2 cup milk
  • 2/3 cup peanut butter
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 3/4 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 3 cups quick oats

Instructions

  1. Prepare Parchment Paper: Pull out 2 sheets of parchment or wax paper and set aside to place the cookies on after mixing.
  2. Combine Ingredients: In a medium-sized saucepan over low heat, combine butter, milk, sugar, and cocoa powder. Stir continuously with a wooden spoon until the butter is completely melted and mixture is smooth.
  3. Boil Mixture: Increase heat to medium. Stir constantly and bring the mixture to a boil. Allow it to boil for 1 minute exactly, stirring constantly to prevent burning. Then remove from heat and keep stirring for a few seconds.
  4. Add Peanut Butter and Vanilla: Add the peanut butter and vanilla extract to the hot mixture, stirring continuously until the peanut butter is fully melted and everything is well incorporated.
  5. Incorporate Oats: Add the quick oats to the mixture and stir thoroughly until all oats are fully coated with the chocolate-peanut butter mixture.
  6. Shape Cookies: Using a spoon, drop approximately 2 tablespoons of the mixture onto the prepared parchment or wax paper sheets, spacing them apart to allow for setting.
  7. Cool and Set: Allow the cookies to cool and set at room temperature for 20 to 30 minutes until firm.
  8. Storage: Once set, store the no bake cookies in an airtight container at room temperature to keep them fresh.

Notes

  • Ensure the mixture boils for exactly 1 minute to help the cookies set properly.
  • Use quick oats for the best texture; rolled oats can be used but may change consistency.
  • If you prefer a nuttier flavor, natural peanut butter can be used instead of creamy peanut butter.
  • Cookies should be cooled completely before storing to maintain their shape.
  • Store in an airtight container to prevent moisture absorption and keep cookies fresh up to one week.
