Description

These No Washing Up Ham, Egg & Cheese Pockets are a simple, delicious breakfast or snack option featuring a warm tortilla filled with ham, melted cheese, and a perfectly baked egg. Wrapped in foil and baked, these pockets have crispy edges and a soft top with a cooked yolk, all while keeping cleanup to a minimum.

  • 2 soft large wraps / tortillas (approx 23 cm / 9″ diameter)
  • 110-150 g / 3.5-5 oz ham slices
  • 1/2 – 2/3 cups grated cheddar or tasty cheese (or any other melting cheese)
  • 2 eggs
  • Oil spray (any type), for the foil


Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) for all oven types to prepare for baking the pockets.
  2. Prepare Foil: Place two pieces of foil on your work surface and spray them with oil to prevent sticking and help achieve crispiness.
  3. Assemble Ham Base: Lay one tortilla on a piece of foil. Arrange the ham slices flat in the center of the tortilla, avoiding a mound shape. You can create a shallow crater in the ham using offcuts to help hold the egg in place.
  4. Add Cheese: Spoon the grated cheese into the middle of the ham, forming it into a ring shape to contain the egg.
  5. Add Egg and Fold: Working one pocket at a time, quickly crack an egg into the cheese ring. Fold the bottom and top edges of the tortilla inward, then fold the left and right sides to form a sealed package. Wrap this package in the oiled foil carefully without turning it upside down to avoid egg leakage.
  6. Place on Tray: Position your wrapped pockets on a baking tray, ready for baking.
  7. Bake: Bake the pockets in the oven for 25 minutes. Check that the egg yolk is cooked by gently poking the dome shape; the base and edges should be crispy while the top remains soft.
  8. Serve: Unwrap the pockets immediately after baking to preserve their crispiness and serve hot for the best taste and texture.

Notes

  • Use large soft tortillas about 23 cm (9″) in diameter for best results.
  • You can use any melting cheese you prefer, such as cheddar or tasty cheese.
