Instructions

  1. Prepare the Beets: Cook the beets until tender, then peel and dice them into bite-sized pieces. This can be done by boiling, roasting, or steaming the beets as preferred.
  2. Assemble the Salad: In a large bowl, combine the cooked and diced beets, finely chopped red onion, minced garlic, orange zest and juice, craisins, chopped cilantro, pistachios, and cubed feta cheese.
