Instructions
- Preheat the Oven: Heat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the potatoes and onions to a crispy finish.
- Toss Ingredients: In a large bowl, combine the potato wedges and sliced onions with olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper. Toss thoroughly until all pieces are evenly coated with the seasoning and oil.
- Arrange on Baking Sheet: Spread the coated potatoes and onions in a single layer on a baking sheet lined with parchment paper to prevent sticking and promote even roasting.
- First Roast: Place the baking sheet in the oven and roast for 25 minutes, allowing the potatoes and onions to begin browning and softening.
- Flip and Continue Roasting: Using a spatula, carefully flip the potatoes and onions to ensure even cooking. Return the sheet to the oven and roast for an additional 20-25 minutes until the potatoes are golden brown and crispy and the onions are caramelized.
