  • 1 cup light brown sugar (packed)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 egg yolk (room temperature)
  • 2 teaspoons pure vanilla extract

Dry Ingredients

  • 2 2/3 cups all purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt

Add-ins and Toppings

  • 1 1/4 cups chocolate chips
  • 1 1/4 cup Easter M&M’s
  • 12 Peep Bunnies


Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F to prepare for baking the cookie bars.
  2. Prepare Pan: Spray a 9×13 inch baking pan with non-stick baking spray to prevent sticking.
  3. Melt Butter: Melt the butter in a microwave-safe bowl for about 30 seconds until fully melted.
  4. Combine Sugars and Butter: In a large bowl, mix together the melted butter, light brown sugar, and granulated sugar until well combined.
  5. Cool Butter Mixture: Let the butter and sugar mixture cool for 2 to 3 minutes to avoid cooking the eggs later.
  6. Add Eggs and Vanilla: Stir in the eggs, egg yolk, and pure vanilla extract until fully incorporated.
  7. Mix Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt.
  8. Combine Dry with Wet: Gradually add the dry mixture into the butter mixture, stirring until just combined to form the cookie dough.
  9. Add Chocolate and M&M’s: Fold in the chocolate chips and Easter M&M’s evenly throughout the dough.
  10. Spread Dough: Transfer the dough into the prepared pan and spread it out evenly using a spatula.
  11. Initial Bake: Bake the cookie bars for 20 to 25 minutes until edges are golden and a toothpick inserted comes out mostly clean.
  12. Add Peeps: Remove the pan from the oven and carefully place the 12 Peep Bunny marshmallows on top of the bars.
  13. Final Bake: Return the pan to the oven and bake an additional 5 to 10 minutes to slightly toast the Peeps and finish baking the bars.
  14. Cool: Remove from the oven and allow the cookie bars to cool in the pan for 5 to 10 minutes before slicing and serving.
