Instructions

  1. Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the carrots.
  2. Clean the Carrots: Scrub the rainbow carrots thoroughly under running water until they are fully cleaned of any dirt or debris.
  3. Season the Carrots: Toss the cleaned carrots with olive oil, kosher salt, and ground black pepper. Arrange them in a single layer on a parchment-lined baking sheet for even roasting.
  4. First Roast: Place the carrots in the preheated oven and bake for 15 minutes, allowing them to start softening and caramelizing.
