Main Ingredients
- 1 ½ kg (about 3¼ lb) boneless beef chuck roast, cut into 1-inch cubes
- ¾ cup (180 ml) low-sodium beef broth
- ½ cup (120 ml) low-sodium soy sauce
- â…“ cup (75 g) packed light brown sugar
- 5 cloves garlic, minced
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons freshly grated ginger
- 1–2 tablespoons gochujang sauce (adjust to taste)
- ½ teaspoon onion powder
- ½ teaspoon ground white or black pepper
- 2 tablespoons cornstarch (for thickening)
Garnish
- Sliced green onions
- Toasted sesame seeds
Instructions
- Prepare the Sauce: In a medium bowl, whisk together the low-sodium beef broth, soy sauce, brown sugar, minced garlic, sesame oil, rice vinegar, freshly grated ginger, gochujang, onion powder, and ground pepper until the mixture is smooth and well combined.
- Coat the Beef: Place the beef cubes into a 6-quart slow cooker and pour the prepared sauce evenly over the meat. Stir gently to ensure all beef pieces are thoroughly coated with the sauce.
- Slow Cook the Beef: Cover the slow cooker with its lid and cook on the Low setting for 6 to 8 hours or on High for about 4 hours, until the beef is tender and easily pierced with a fork.
- Thicken the Sauce: About 30 minutes before serving, take a small amount of the cooking liquid from the slow cooker and mix it with the cornstarch to form a slurry. Stir this slurry back into the slow cooker to thicken the sauce.
- Final Cooking: Cover and continue cooking on the High setting for an additional 30 minutes until the sauce has thickened to a luscious consistency.
- Serve: Spoon the slow-cooked Korean beef over steamed rice. Garnish with sliced green onions and toasted sesame seeds for added flavor and texture. Enjoy your hearty, flavorful meal!
Notes
- Adjust the amount of gochujang to control the heat level of the dish according to your preference.
- Using low-sodium soy sauce and beef broth helps manage the salt content, making the dish less salty.
- For best results, cut the beef into uniform 1-inch cubes to ensure even cooking.
- Garnishes like green onions and toasted sesame seeds add freshness and a subtle crunch; they can be omitted or substituted as desired.
- This dish pairs wonderfully with steamed jasmine or short-grain rice.
