Cucumber Juice

  • 2 large cucumbers (sliced)

Cocktail Mix

  • 1 cup Exotico Reposado tequila
  • 1/2 cup triple sec

Instructions

  1. Make the Jalapeno Simple Syrup: Heat a small saucepan over medium-high heat. Combine water, fresh lime juice, sugar, whole cilantro, and jalapeno halves. Bring the mixture to a boil, stirring to dissolve the sugar completely. Reduce to a simmer and let cook for 2 minutes. Remove from heat, strain out jalapeno and cilantro, discard them, and transfer syrup to a bowl. Refrigerate to chill.
  2. Prepare Cucumber Juice: While the syrup chills, puree the sliced cucumbers in a high-powered blender until smooth.
  3. Strain Cucumber Puree: Pour the cucumber puree through a fine mesh metal strainer, pressing down to extract all the juice. Discard the pulp. Chill the juice in the refrigerator.
  4. Mix the Margarita: When ready, combine the chilled jalapeno simple syrup and cucumber juice in a pitcher. Add the Exotico Reposado tequila and triple sec. Stir well to blend all ingredients.
  5. Prepare Glasses and Serve: Rim glasses with the cilantro-salt mixture. Pour the margarita over ice into the prepared glasses. Garnish with cucumber slices.
