  • 3 cups leftover cooked brown rice

  • 4 teaspoons soy sauce (or more to taste)
  • 1 teaspoon Asian fish sauce (or more soy sauce)


Instructions

  1. Season Shrimp: In a bowl, combine the shrimp with chili powder, paprika, garlic powder, cayenne pepper, kosher salt, and fresh black pepper. Mix well to coat all the shrimp evenly with the spices.
  2. Cook Eggs: Heat a wok or large skillet over medium-high heat and spray with oil. Cook the beaten egg whites first, stirring until set, then remove from the pan. Repeat the process with the beaten whole egg. Set both aside for later.
  3. Sauté Aromatics: Increase heat to high. Add sesame oil to the wok, then sauté the chopped onion, scallion whites, garlic, and crushed red pepper flakes for 1-2 minutes until fragrant and slightly softened.
  4. Cook Shrimp: Add the seasoned shrimp to the wok and stir-fry for 2-3 minutes until they turn pink and opaque, ensuring they are cooked through.
  5. Add Rice: Add the leftover cooked brown rice to the wok, allowing the bottom to brown slightly for 2-3 minutes to add texture and flavor.
  6. Mix Eggs and Sauces: Stir in the cooked eggs, soy sauce, and Asian fish sauce into the rice and shrimp mixture. Mix thoroughly for about 2 minutes to combine flavors evenly.
  7. Serve: Finally, stir in the scallion greens and immediately serve the spicy shrimp fried rice hot.
