Instructions

Add the egg yolk and cold water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap it in plastic, and chill in the refrigerator for 30 minutes.
  2. Shape and Bake Tart Shells: Roll out the chilled dough on a floured surface and press it evenly into four tart pans. Trim any excess dough and prick the bottoms with a fork to prevent puffing.
