For the Mushrooms
- 16 large white or cremini mushrooms, stems removed and finely chopped
For the Filling
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1/2 small onion, finely diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1/2 cup plain breadcrumbs
- 1/2 cup grated Parmesan cheese
- 4 ounces softened cream cheese
- 2 tablespoons chopped fresh parsley, plus more for garnish
Instructions
- Preheat: Preheat your oven to 375°F (190°C). Clean the mushrooms gently with a damp paper towel and carefully remove the stems, setting them aside for the filling.
- Sauté Filling Ingredients: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the finely chopped mushroom stems, diced onion, and minced garlic. Cook for 4 to 5 minutes or until softened and fragrant. Season with salt, black pepper, and Italian seasoning. Remove from heat and let the mixture cool slightly.
- Mix Filling: In a bowl, combine the cooked mushroom stem mixture with breadcrumbs, grated Parmesan cheese, softened cream cheese, and chopped fresh parsley. Stir well to form a cohesive filling.
- Prepare Mushrooms: Place the mushroom caps on a baking sheet. Brush each cap lightly with the remaining tablespoon of olive oil to help them roast nicely.
- Stuff Mushrooms: Spoon the prepared filling generously into each mushroom cap, pressing gently to pack the filling in well.
- Bake: Bake the stuffed mushrooms in the preheated oven for 18 to 20 minutes, or until the tops are golden brown and the mushrooms are tender.
- Garnish and Serve: Remove from the oven and garnish with additional chopped parsley before serving warm.
Notes
- For extra richness, add 2 tablespoons of cooked crumbled bacon to the filling.
- You may substitute panko breadcrumbs for a crunchier texture.
