Description

Delicious and savory stuffed mushrooms make the perfect appetizer or side dish for any gathering. These mushrooms are filled with a flavorful mixture of sautéed mushroom stems, garlic, onion, herbs, breadcrumbs, Parmesan, and creamy cheese, then baked to golden perfection.

For the Mushrooms

  • 16 large white or cremini mushrooms, stems removed and finely chopped

For the Filling

  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1/2 small onion, finely diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup plain breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 4 ounces softened cream cheese
  • 2 tablespoons chopped fresh parsley, plus more for garnish


Instructions

  1. Preheat: Preheat your oven to 375°F (190°C). Clean the mushrooms gently with a damp paper towel and carefully remove the stems, setting them aside for the filling.
  2. Sauté Filling Ingredients: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the finely chopped mushroom stems, diced onion, and minced garlic. Cook for 4 to 5 minutes or until softened and fragrant. Season with salt, black pepper, and Italian seasoning. Remove from heat and let the mixture cool slightly.
  3. Mix Filling: In a bowl, combine the cooked mushroom stem mixture with breadcrumbs, grated Parmesan cheese, softened cream cheese, and chopped fresh parsley. Stir well to form a cohesive filling.
  4. Prepare Mushrooms: Place the mushroom caps on a baking sheet. Brush each cap lightly with the remaining tablespoon of olive oil to help them roast nicely.
  5. Stuff Mushrooms: Spoon the prepared filling generously into each mushroom cap, pressing gently to pack the filling in well.
  6. Bake: Bake the stuffed mushrooms in the preheated oven for 18 to 20 minutes, or until the tops are golden brown and the mushrooms are tender.
  7. Garnish and Serve: Remove from the oven and garnish with additional chopped parsley before serving warm.

Notes

  • For extra richness, add 2 tablespoons of cooked crumbled bacon to the filling.
  • You may substitute panko breadcrumbs for a crunchier texture.
