Description

This Summer Berry Bliss Icebox Delight is a no-bake, layered dessert featuring a crisp graham cracker base, creamy vanilla pudding and cream cheese mixture, fluffy whipped cream, and fresh summer berries. Topped with melted white chocolate drizzle, it is a refreshing and easy-to-make treat perfect for warm weather and gatherings.

Ingredients

Scale

Graham Cracker Layer

  • 19 oz graham crackers

Pudding Mixture

  • 8 oz cream cheese, softened
  • 2 (3.4 oz) packages Vanilla Instant Pudding mix
  • 2 1/2 cups cold milk

Whipped Cream Layer

  • 12 oz Cool Whip (or homemade whipped cream)

Fruit Layers

  • 3 cups fresh strawberries, sliced
  • 1 1/2 cups fresh blueberries

Topping

  • 2 oz white chocolate chips

Instructions

  1. Beat cream cheese and dry pudding mixes: In a large bowl, use a mixer to beat the softened cream cheese together with the dry vanilla instant pudding mixes until well blended and smooth.
  2. Gradually beat in milk: Slowly add the cold milk to the cream cheese and pudding mixture, continuing to beat until the mixture is thoroughly combined and smooth.
  3. Stir in Cool Whip: Gently fold in the Cool Whip or homemade whipped cream into the pudding mixture, reserving about half a cup of Cool Whip for the topping layer.
  4. Layer the dessert: Spread a thin layer of the reserved Cool Whip evenly in the bottom of a 9×13-inch pan. Then create alternating layers: start with graham crackers, followed by the pudding mixture, then a layer of fresh sliced strawberries and blueberries. Repeat these layers until the pan is filled, ensuring the top layer is the remaining Cool Whip.
  5. Refrigerate: Cover the assembled dessert and chill it in the refrigerator for at least 4 hours or preferably overnight. This allows the graham crackers to soften and the flavors to meld beautifully.
  6. Drizzle with white chocolate: Before serving, gently melt the white chocolate chips until smooth and drizzle them artistically over the top of the dessert for an elegant and delicious finishing touch.

Notes

  • You can substitute homemade whipped cream for Cool Whip for a fresher flavor.
  • Make sure the cream cheese is softened to avoid lumps in the pudding mixture.
  • For added texture, consider layering crushed graham crackers instead of whole sheets.
  • Use fresh, ripe berries for the best flavor and sweetness.
  • This dessert can be prepared a day ahead and refrigerated for convenience.
