Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, brown sugar, kosher salt, cinnamon, ground nutmeg, and ground ginger until well combined.
  2. Combine Wet Ingredients: In a separate bowl, whisk the buttermilk and roasted sweet potato puree until smooth. Add the eggs and vanilla extract, whisking until fully incorporated.
  3. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients bowl. Stir gently with a wooden spoon until just combined, taking care not to overmix in order to keep the pancakes tender.
  4. Cook Pancakes: Heat a large nonstick skillet or griddle over medium heat and melt some butter. When the butter is foamy, reduce heat to medium-low. Ladle about a scant 1/2 cup of batter onto the skillet. Cook until bubbles form on the surface and the bottom turns golden, about 3 minutes. Flip and cook another 3 minutes until golden and cooked through.
