Instructions
- Cook the Beef and Vegetables: In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Add the diced onion and minced garlic, sautéing until the onions are translucent and fragrant.
- Add Seasonings and Vegetables: Stir in the taco seasoning, frozen corn, black beans (if using), and the entire can of petite diced tomatoes with green chilies including the juice. Let the mixture simmer for about 5 minutes to combine flavors and heat through.
- Mix Sour Cream and Crushed Doritos: In a separate bowl, combine the cup of sour cream with the finely crushed Doritos to create a creamy, crunchy mixture that will become the casserole’s base layer.
- Assemble the Casserole: In a lightly greased baking dish, spread the sour cream and crushed Doritos mixture evenly on the bottom. Layer the cooked beef and vegetable mixture on top.
