Meat and Seasoning

  • 1/2 pound ground beef
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1/4 cup water

Bread and Cheese

  • 8 slices sandwich bread
  • 2 tablespoons unsalted butter, softened
  • 2 cups shredded Mexican blend cheese (or a mix of cheddar and Monterey Jack)

Optional Toppings

  • Sliced jalapeños
  • Sour cream
  • Salsa
  • Chopped cilantro


Instructions

  1. Cook the Beef: Heat olive oil in a skillet over medium heat. Add the ground beef, breaking it apart with a spatula, and cook until it turns brown and is fully cooked through. Drain any excess grease from the pan.
  2. Season the Beef: Stir in the taco seasoning and water. Reduce the heat slightly and let the mixture simmer for 2 to 3 minutes until the sauce thickens. Remove from heat and set aside.
  3. Prepare the Bread: Butter one side of each bread slice evenly. This will help achieve a golden, crispy crust when cooking.
  4. Assemble the Sandwiches: Place four slices of bread, butter-side down, onto a clean skillet or griddle set to medium heat. Sprinkle a generous layer of shredded cheese on each slice, then spoon the seasoned taco meat evenly on top of the cheese layer. Add another layer of cheese over the meat, then cover each with the remaining bread slices, butter-side up.
  5. Grill the Sandwiches: Cook the sandwiches for 3 to 4 minutes on each side, flipping carefully, until the bread is golden brown and crispy, and the cheese has melted thoroughly.
