Canned Goods and Dairy
- 1 (10-oz) can Rotel diced tomatoes and green chilies (undrained)
- 1 (10.5-oz) can condensed cheddar cheese soup
- 1 (16-oz) container sour cream
- 2 cups shredded cheddar cheese
Instructions
- Preheat and Prepare: Preheat your oven to 350ºF. Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking and set it aside for later.
- Cook Noodles: Prepare the egg noodles according to the package directions until al dente. Drain well and set aside.
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until it is no longer pink, breaking it apart as it cooks. Drain excess fat.
- Season Meat: Add the taco seasoning and â…” cup water to the cooked beef in the skillet. Stir well and continue cooking for approximately 5 minutes to let the flavors meld. Remove from heat and set aside.
- Mix Ingredients: In a large mixing bowl, combine the seasoned taco meat, undrained Rotel diced tomatoes with green chilies, cooked egg noodles, condensed cheddar cheese soup, sour cream, and shredded cheddar cheese. Stir the mixture thoroughly until well combined.
- Assemble Bake: Spread the combined mixture evenly into the prepared 9×13-inch baking pan.
- Bake: Place the pan uncovered in the preheated oven and bake for 25 to 30 minutes, or until the casserole is bubbly and heated through.
Notes
- For a spicier dish, use hot Rotel tomatoes instead of mild.
- You can substitute ground turkey or chicken for ground beef for a leaner option.
- Sour cream can be replaced with Greek yogurt for added protein and tang.
- Leftover bake can be refrigerated for up to 3 days and reheated in the oven.
- Adding a sprinkle of fresh cilantro or green onions on top before serving can add freshness and color.
