Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Sauté Vegetables: Heat 2 tablespoons of sesame oil in a large ovenproof skillet over medium heat. Add the broccoli florets, diced red bell pepper, and sliced scallions. Cook and stir for 3 to 5 minutes until the vegetables are softened but still vibrant.
- Prepare Sauce: In a measuring cup, whisk together the low-sodium teriyaki sauce, water, cornstarch, and grated garlic until smooth and combined.
- Add Sauce to Vegetables: Pour the prepared teriyaki sauce mixture into the skillet with the vegetables. Stir well to coat everything evenly and allow the sauce to begin thickening slightly.
- Combine Chicken and Rice: Add the sliced cooked chicken and cooked brown rice into the skillet. Mix everything thoroughly so the sauce, chicken, rice, and vegetables are evenly distributed.
