Ingredients
Scale
Chicken
- 2 boneless skinless chicken breasts, cut into 1-inch pieces
- 1/2 teaspoon garlic powder
- Pepper, to taste
- 3 tablespoons cornstarch
- 3 tablespoons olive oil, divided
Vegetables
- 1/2 medium onion, sliced
- 2 cups broccoli florets, cut small
- 1/2 red bell pepper, sliced
Sauce
- 1/2 cup chicken broth
- 3 tablespoons mirin (Japanese sweet rice wine)
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar (or apple cider vinegar)
- 1/4 cup packed brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
Instructions
- Prep the ingredients: Cut the vegetables into bite-size pieces ensuring the broccoli is cut small for even cooking.
- Make the sauce: In a medium bowl, whisk together chicken broth, mirin, soy sauce, rice vinegar, brown sugar, cornstarch, grated ginger, and minced garlic until smooth.
- Season and coat chicken: Place the cut chicken pieces in a bowl. Sprinkle with garlic powder and pepper, stir to combine. Add cornstarch and toss until chicken is evenly coated.
- Heat oil in skillet: Heat 2 tablespoons of olive oil in a deep skillet over medium-high heat until hot.
- Cook chicken in batches: Shake off excess cornstarch from half the chicken, add to skillet, and cook for 4 minutes. Flip and cook for another 3-4 minutes until browned and cooked through. Transfer cooked chicken to a plate. Repeat with remaining chicken, adding the last tablespoon of oil to the skillet.
- Sauté onions: If pan is dry, add about 1 teaspoon olive oil, then add onions and cook for 1 minute, stirring occasionally.
- Cook vegetables: Add broccoli and red bell pepper to skillet and stir-fry for 3 minutes until tender-crisp. Cook longer if softer veggies are desired.
- Combine and thicken sauce: Return chicken to skillet. Whisk the sauce again and pour it over the chicken and vegetables. Stir constantly over heat until sauce bubbles and thickens, about less than 1 minute.
- Serve: Remove skillet from heat and serve immediately while hot.
Notes
- Mirin adds sweetness and depth; if unavailable, a mixture of white wine and sugar can be substituted.
- Cut vegetables uniformly to ensure even cooking.
- Cooking chicken in batches helps achieve a better sear and prevents overcrowding.
- For a thicker sauce, allow it to bubble slightly longer, stirring continuously.
- Serve this stir fry over steamed rice or noodles for a complete meal.
