- 1/2 avocado, sliced
- 4 slices bread
Herb Mayo
- 1/2 cup mayo
- Juice of 1/2 lime
- 4 large leaves fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon shallot, chopped
- 1 clove garlic, minced
- 1/2 teaspoon Dijon mustard
Instructions
- Make the Herb Mayo: Finely chop the basil, parsley, shallot, and garlic. In a small bowl, combine the mayo, lime juice, Dijon mustard, and all chopped herbs and garlic. Mix well until evenly blended. You can use it immediately or refrigerate for about an hour to let the flavors meld.
- Toast the Bread: If desired, toast the bread slices lightly to add crunch and warmth to your sandwich.
