Crust

Instructions
- Prepare the crust: Preheat the oven to 325°F (163°C). Crush the shortbread cookies using a food processor until you have 2 cups of crumbs. In a large bowl, combine the shortbread crumbs with the melted butter, stirring until well mixed. Spray a 9-inch springform pan with cooking spray, then evenly press the crust mixture into the bottom of the pan.
- Make the cheesecake filling and bake: In a large bowl, use a hand mixer to blend the softened cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing until fully incorporated each time. Pour this mixture over the crust in the prepared pan.
