Ingredients
Scale
Vegetables
- 4–5 Persian cucumbers, cut into rounds
- 7–8 mini sweet bell peppers, sliced into rings
- 2 large carrots, peeled and cut into ribbons or small pieces
- 1 medium shallot, thinly sliced
Dressing and Seasoning
- 1/4 cup Asian miso ginger dressing (any brand)
- 1 tablespoon chili crunch oil
- 1 tablespoon everything bagel seasoning, plus extra for topping
Instructions
- Prepare the Vegetables: Thoroughly wash and cut the Persian cucumbers into rounds, slice the mini sweet bell peppers into rings, peel and cut the carrots into ribbons or small pieces, and thinly slice the shallot. Ensure all vegetables are evenly chopped for consistent texture and flavor.
- Add the Dressing: Place all the prepared vegetables into a large bowl. Pour the Asian miso ginger dressing over them and use a large spoon or salad tongs to toss everything until the vegetables are evenly coated with the dressing.
- Season and Spice: Add the chili crunch oil and the tablespoon of everything bagel seasoning to the bowl. Toss again thoroughly to combine the flavors and distribute the seasoning evenly throughout the salad.
- Finish and Serve: Optionally sprinkle extra everything bagel seasoning on top for additional crunch and flavor. Serve the salad immediately for a crisp texture, or refrigerate for 1 hour to allow the flavors to meld and enjoy a colder, more marinated salad.
Notes
- Use Persian cucumbers for a crisp, less bitter cucumber option.
- If Asian miso ginger dressing is unavailable, try a blend of miso paste, ginger, rice vinegar, and sesame oil.
- Chili crunch oil adds heat and texture; adjust quantity based on spice tolerance.
- Everything bagel seasoning can typically be found in grocery stores or online.
- For a vegan option, confirm the chili crunch oil and dressing are vegan-friendly.
- This salad is best eaten fresh but can be refrigerated for up to 24 hours.
